Delicious Summer Fruit Cupcakes with a Pimm’s Twist

Summer is on it’s way! There’s food and music festivals galore and with them come plenty of yummy picnics and tasty BBQs.

If you are hosting one or have been invited to one, we have a show stopper of a dessert for you to wow your friends and family with. Sweet, fluffy cupcakes with a Pimm’s twist, a hidden strawberry surprise and topped with juicy Summer fruit.

There is so much excitement this year about Andy Murray teaming up with Serena Williams in the mixed double…. and it looks like the sun is set to last for the final too.☀️☀️☀️ So why not get prepping for a Wimbledon Summer garden party with these delicious Pimms summer fruit cupcakes and a cheeky glass of Pimms over ice and fruit with a cheeky shot of gin!

Last year I went totally chocolate with No-bake Chocoberry Tart, however this time we decided to go a bit more traditional and make these fabulous Pimms Summer Fruit cupcakes…. a whole strawberry soaked in Pimms and a dash of gin, encased in a vanilla sponge cake, drizzled with sweet Pimms syrup topped with smooth butter team and lots of juicy summer fruit!

These yummy cakes were served with a cocktail of Pimms, a shot of gin over lots of ice, fruit and cucumber chunks and topped up with ginger beer… definitely one for the adults! These are certainly impressive looking cakes with a pop of bright colours and fruity flavours. These would be great at any summer party.

Pimm's Summer Fruit Cupcakes

A vanilla and orange zest cake with a whole strawberry soaked in Pimms and a dash of gin, drizzled with sweet Pimms syrup topped with smooth butter team and lots of juicy summer fruit

Ingredients
  • For the Cake:
  • 175g butter (room temperature, cubed),
  • 175g caster sugar,
  • 175g self raising flour,
  • 3 eggs,
  • Zest of 1 orange,
  • Decoration
  • 4 strawberries, quartered
  • 6 raspberries, halved
  • 1 orange, sliced and segmented
  • Mint
  • juice of 1 orange
  • For the frosting:
  • 250g butter (room temp, cubed)
  • 375g icing sugar
Directions
  • Step 1 For the cake
  • Step 2 Preheat oven to 180c, 160 fan and line muffin tray with 12 cup cake cases
  • Step 3 Beat together the butter and sugar in a mixing bowl until pale
  • Step 4 Alternately beat in the eggs and the sifted flour
  • Step 5 Add orange juice and zest and beat until combined
  • Step 6 Using 2 spoons, fill the cup cake cases about 3/4 full with the cake mix
  • Step 7 Place in the oven for 15-20 mins.
  • Step 8 If a cocktail stick comes out of the cake clean the cakes are cooked
  • Step 9 For the frosting
  • Step 10 Beat the butter until pale (at least 5 mins)
  • Step 11 Gradually add in icing sugar until all combined
  • Step 12 Optionally add 2 tbsp of Pimms to the mixture
  • Step 13 To decorate
  • Step 14 Cut a cone from the top of each cupcake (roughly strawberry sized)
  • Step 15 place a soaked strawberry in the hole of each cake
  • Step 16 Pipe buttercream using your chosen nozzle (we used round)
  • Step 17 Decorate with slices of orange, raspberry and strawberry and mint leaves

For the Pimms cocktail, simply chop up chunks of cucumber and summer fruit (we used strawberries, raspberries, and slices of oranges) with some crushed mint, add to a jug of ice and fill with your desired amount of Pimms, a shot (or two) of gin and top with chilled ginger beer… it’s seriously delicious!

Here’s a peek at the boozy berries that make these cakes fab for celebrating!

Choose 12 neat, medium sized strawberries that you want inside your cupcakes, place in a container and fill with Pimms and a dash of gin (if you want this booze free, then simply use a berry cordial)… leave for an hour or two and drain the strawberries. My tip… don’t throw away this lovely berry infused liquor, it’s fab when added to Prosecco or simmered down with sugar to make a lovely Pimms syrup!

Once you have drained and patted your strawberries dry, make a hole in the now cooled cupcakes and place a Pimms infused strawberry into each one… once done you are all set to decorate as detailed above!
